Monday night, we had dinner at my mom's house (Mimi to my boys). Two things you should know about Mimi....Mimi is the most awesome cook, and Mimi doesn't know how to cook for less than 50 people. I obviously benefit from both of these, as my kids eat her cooking as if they've been starving for 2 weeks, and I get to bring home copious amounts of leftovers. YAY for leftovers!! Well, Mimi makes this great cornbread dish that my brother, sister and I have been eating since we were all kids. We have always called it "cornbread stuff". That's it...just cornbread stuff. "What is cornbread stuff?" you ask. Cornbread stuff is cornbread with a layer of ground beef and sausage, creamed corn, onions, mushrooms, and a ton of cheese all cooked into the middle until it is ooey gooey melted goodness. Holy haberdashery Batman!!! My mouth is watering just thinking about this dish. It really is super scrumptiously delicious. Yes, my kids ate it Monday night as if I hadn't fed them all day. She made 2 huge cast iron skillets, and to my delight, cornbread stuff came home with us. Over the weekend, I made the Pasta Fagioli, and it turned out very good. So, Tuesday's lunch was cornbread stuff and Pasta Fagioli. They were some happy boys!

*homemade Pasta Fagioli with Colby-Jack cheese on top- I cut the cheese with the CuteZCute Cuddle Palz bear cutter and placed it on top of the Pasta Fagioli after it was heated so that it would get all ooey, gooey, and melty. *Nonni's almond pistachio crisps- These crisps are a cross between a biscotti and a chip. My kids love them for a snack. They have no added color, no preservatives, no high fructose corn syrup, and are loaded with pistachios and almonds. I bought these at Super Target, and they have quickly become one of our favorite snacks.

CuteZCute Cuddle Palz Koala lunch...
If you visit The Lucky Lunchbox often, then you already know how much I love the CuteZCute line of cutters and stamps. The CuteZCute Animal Friends deco cutter set is by far one of my favorite sets to use, and the Animal Palz set runs a close second. Both of these sets are easy and fun to use, and the possibilities for super cute creations with them are endless. You can see my Panda lunch made using the CuteZCute Animal Friends kit HERE, and my Mess of Monkeys lunch made using the Animal Palz kit HERE.
Recently, CuteZCute released it's newest baby......the Cuddle Palz sandwich cutter and cookie stamp kit. I'm so excited to be one of the first ones to receive this kit to try out. Like the original CuteZCute Animal Friends, there are several cute options in one kit. Actually, the Cuddle Palz kit has over 40 fun and creative options. With this system, you can create a bear, a koala, a hamster, or a tiger shaped sandwich. I decided to make a koala sandwich my first time using it, and it turned out adorable. The Cuddle Palz kit also comes with this cute koala pick to help remove small cut-outs from the cutters. But, it makes a great fun food pick, as well. I used it for Z's hotdog. Cuddle Palz gets a thumbs up from The Lucky Lunchbox.

Playing cat and mouse...
Hi Friends!! Happy Tuesday to you. Well, the count down has begun in my house. My kids have 7 more days of school left before summer break, and you can bet they are COUNTING. EVERY. SECOND!! Actually, so am I. This mama is soooo over homework, early alarms, AND making lunches at this point. But, alas, the kidlets still want to eat lunch. So, from now til the end of the school year, Z's lunches will probably be very simple....(yes, I enjoy making these lunches for Z, but I am ready for the more relaxed summertime lunch making schedule.) Today, I chose to go with the CuteZCute Animal Friends deco cutter kit again. This is such a simple kit to use, and it scores a 10 on the cuteness scale. Earlier in the month, I made a CuteZCute panda lunch, and last week, I made CuteZCute frog pancakes and piggy mac and cheese. So, to round out the animal bunch, today's lunch has a CuteZCute cheese kitty sandwich. If you make fun lunches for your kidlets, please check out the CuteZCute Animal friends kit. *homemade kitty shaped Parmesan cheese crackers- Ok....these were definitely a cooking fail. I think I over baked them. They were very crunchy like a cracker and tasted pretty good, but definitely a bit over cooked. I will try to make them again, but adjust the baking time some. If they turn out better, I will blog the recipe.

*carrot rounds and red cherry tomatoes with cat cupcake pick
*strawberries and blackberries- The strawberry mouse is just crazy cute. I saw the strawberry mouse idea on Pinterest. He is very easy to make. I cut the green top off the strawberry. The ears are 2 pieces of the Parmesan crackers that I stuck into the strawberry. (The Pinterest version used 2 almond slivers for the ears...I didn't have almonds, so I improvised with the cracker pieces.) The nose is a mini chocolate chip, and the eyes are a dot of gel icing. But, I could have used 2 mini chips for the eyes with the same effect.

CuteZCute Frog pancakes
We love breakfast for dinner. The hubs was working late last night, and the kidlets wanted pancakes and sausage for dinner. Well, this mama wasn't feeling the homemade pancake thing, so Eggo was my friend last night. So, since I skimped on the homemade, I figured I'd go the extra mile and cutify (yeah, it's a word) Z's pancake a bit. Enter the CuteZCute frog cutter. If you tuned in for yesterday's post, then you know how much I love the CuteZCute Animal food cutters kit. This kit really does have endless possibilities. My pancake frog turned out wayyyy cuter than I expected. Z was splendiferously happy with his frog, but not so much with the egg.

Three little pigs lunch...
I love using cute cutters to make a lunch special. And I especially love the CuteZCute line of food cutters and stamps. The CuteZCute animal friends deco cutter kit is definitely one of my favorite fun food tools to use. With this kit, you can cut a boring sandwich into the shapes of a panda, frog, cat, or a pig. They are all absolutely adorable, and this cutter is very easy to use (which is key for me as I don't like to create lunches that are difficult or labor intensive.) There are other great uses for these cutters, too. In this lunch, I have cut the bologna with the pig shaped cutter. It can also be used to cut cheese, tortilla shells, cookie dough, pizza dough....the possibilities are endless. The CuteZCute deco cutter kit is a really fun lunch making accessory. CuteZCute panda lunch...
I love using cute cutters to make a lunch special. And I especially love the CuteZCute line of food cutters and stamps. The CuteZCute animal friends deco cutter kit has to be one of my favorite fun food tools to use. With this kit, you can cut a sandwich into the shapes of a panda, frog, cat, or a pig. They are all absolutely adorable, and this cutter is very easy to use (which is key for me as I don't like to create lunches that are difficult or labor intensive.) I have chosen the panda cutter for today's lunch.
I also used the CuteZCute Animal Palz kit to make the frozen yogurt panda. I froze the yogurt into the panda shape and added it to the other yogurt in his lunch. It will thaw before lunchtime, and the frozen yogurt helps to keep the other yogurt cold. I love doing this with yogurt. You can freeze it into any shaped mold (silicone ice cube molds work great) that you may have, then add the frozen shape to the lunch. Presto!!.....cold and cute yogurt at lunchtime.

Angry Birds...
Here's one more lunch from the summertime......Angry Birds. We love Angry Birds!!!! Z loves to play the game, and I have to admit, so do I! This lunch went over very well with Z. I found the cute AB tin when I was shopping at my favorite thrift store (thrift store shopping is a favorite pastime of mine). It went along quite well with the lunch.

Ribbit Ribbit.....
Well, I'm happy to report that Z loved yesterday's lunch of macaroni and cheese packed in the thermos. Woo Hoo!!!!.... so many more options for me to pack in his lunch now. He really liked this chip and dip container, too. He asked me to pack his lunch in it again today. So, today I'm using one of my favorite products....the CuteZCute Food Cutter. It makes super easy and cute sandwiches a cinch. The sandwich is made using the frog cutter. This container is a bit on the small side, so I included a side cup of applesauce (which just happens to be a cute frog). Ribbit Ribbit!!

A mess of Monkeys.....
I was given the opportunity to try out CuteZCute's newest creation.... the Animal Palz mini sandwich and egg press. I really like this product. Like the original CuteZCute, there are several cute options in one kit. With this system, you can create a monkey, a bat, a panda, or a sheep mini stuffed pocket sandwich. Or, it can be used to mold boiled eggs into these same animal shapes. I decided to make the monkey pocket sandwich my first time using it, and they turned out adorable (even though I stuffed them a bit too much). I used the panda to make some molded boiled eggs (my hubby ate them before I got around to snapping a pic), and they were almost too cute to eat......almost!!!! I hate that Z doesn't eat boiled eggs......I'd sure be using this like crazy. The Animal Palz system works great, and we are definitely going to enjoy using it.
